Recipe for Chocolate Tofu Mousse!

I love chocolate! This is a very satisfying and healthy recipe that even a chocoholic would enjoy!

1 container of silken tofu
1 3.5 oz dark chocolate bar 70% (I like Lindt the best)
1 Tsp of Vanilla
1 Tbsp of coffee (you know from this am) optional but it brings out the flavor
2 Tbsp white agave nectar
¼ cup of soy milk

Melt chocolate in soy milk in microwave. Stir every 30 seconds until smooth and creamy add with the other ingredients in a food processor and mix until yep you guessed it smooth and creamy! Garnish with berries and/or toasted almonds and enjoy!

Yields 6-8 servings 123 cal per serving.
